Ingredients:
  • 2 cups nonfat plain Greek yogurt
  • 1–2 teaspoons Vanillux vanilla paste (adjust to taste; paste gives a deeper flavor than extract)
  • 1–2 tablespoons erythritol or your sweetener of choice
  • ¼ cup fresh strawberries, sliced
  • ¼ cup fresh blueberries
  • ¼ cup fresh raspberries
  • Optional toppings: chia seeds, crushed pistachios, lemon zest
Instructions:
  • In a bowl or blender, mix the Greek yogurt, vanilla paste, and sweetener until smooth and creamy.
  • Spread the mixture evenly onto the lined tray, about ½ inch thick.
  • Scatter the strawberries, blueberries, and raspberries on top—press them in gently.
  • Add any optional toppings you like (chia seeds or pistachios for crunch).
  • Freeze for at least 3–4 hours, or until completely solid.
  • Once frozen, break or cut into bark-style pieces. Store in an airtight container in the freezer.
